The Ancho Poblano is one of the largest and most widely grown Mexican chili peppers of the Capsicum annuum species. The large, heart-shaped, three-chambered fruits ripen from very dark green to maroon-red , and turn almost black when dried. The pepper is mild, with a heat rating of only 1,000–2,000 SHU , making it excellent for stuffing, roasting, sauces, and traditional Mexican dishes.

When the fruit is picked green , it is called Poblano , and after ripening and drying it is known as Ancho . It is considered one of the largest and, especially in Mexico, one of the most widely grown chili peppers.
